- Fresh cilantro - 2 tablespoons, chopped
- Peanut sauce - for serving (optional)
Steps
- Preheat your grill or grill pan over medium-high heat.
- Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to cut through the skin.
- In a small bowl, mix together soy sauce, sesame oil, minced garlic, brown sugar, lime juice, and chili flakes to create a marinade.
- Brush the marinade generously over the cut sides of the eggplants, ensuring it seeps into the scored flesh.
- Place the eggplants, cut side down, on the grill and cook for about 6-8 minutes until the skin is charred and the flesh is tender.
- Flip the eggplants over and grill for an additional 3-5 minutes to achieve a nice char on the flesh.
- Remove from the grill and sprinkle with chopped cilantro before serving.
- Serve warm with peanut sauce on the side, if desired.
