  • Brown sugar - 1 teaspoon (5g)
  • Fresh lime juice - 1 tablespoon (15ml)
  • Chili flakes - 1/2 teaspoon (2g)
  • Fresh cilantro - 2 tablespoons, chopped
  • Peanut sauce - for serving (optional)

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to cut through the skin.
  3. In a small bowl, mix together soy sauce, sesame oil, minced garlic, brown sugar, lime juice, and chili flakes to create a marinade.
  4. Brush the marinade generously over the cut sides of the eggplants, ensuring it seeps into the scored flesh.
  5. Place the eggplants, cut side down, on the grill and cook for about 6-8 minutes until the skin is charred and the flesh is tender.
  6. Flip the eggplants over and grill for an additional 3-5 minutes to achieve a nice char on the flesh.
  7. Remove from the grill and sprinkle with chopped cilantro before serving.
  8. Serve warm with peanut sauce on the side, if desired.
