  • Coconut milk - 200 ml
  • Curry powder - 2 tablespoons
  • Carrots - 100 grams, sliced
  • Bell pepper - 100 grams, thinly sliced
  • Zucchini - 100 grams, sliced
  • Red onion - 50 grams, thinly sliced
  • Chickpeas - 100 grams, cooked
  • Fresh cilantro - 20 grams, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a lightly floured surface to your desired thickness.
  3. Transfer the rolled dough to a baking sheet lined with parchment paper.
  4. In a saucepan, heat olive oil over medium heat and add sliced red onion, cooking until softened.
  5. Add the sliced carrots, bell pepper, and zucchini to the pan and sauté for about 5 minutes.
  6. Stir in the cooked chickpeas, curry powder, and coconut milk, mixing well. Simmer for 5-7 minutes until the sauce thickens slightly.
  7. Season the mixture with salt, black pepper, and lime juice to taste.
  8. Spread the vegetable and curry mixture evenly over the pizza dough.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  10. Remove from the oven and garnish with fresh cilantro before slicing and serving.
