Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Coconut milk - 200 ml, full fat
  • Curry powder - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped for garnish
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the chicken thighs, curry powder, turmeric powder, minced garlic, minced ginger, fish sauce, lime juice, salt, and black pepper. Mix well to coat the chicken evenly.
  3. In a baking dish, arrange the marinated chicken, then pour the coconut milk over it.
  4. Add the sliced red bell pepper and zucchini on top of the chicken and coconut milk.
  5. Drizzle the olive oil over the vegetables and chicken.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is fully cooked and the vegetables are tender.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro before serving.
