- Chicken thighs - 400 grams, boneless and skinless
- Coconut milk - 200 ml, full fat
- Curry powder - 2 tablespoons
- Turmeric powder - 1 teaspoon
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped for garnish
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the chicken thighs, curry powder, turmeric powder, minced garlic, minced ginger, fish sauce, lime juice, salt, and black pepper. Mix well to coat the chicken evenly.
- In a baking dish, arrange the marinated chicken, then pour the coconut milk over it.
- Add the sliced red bell pepper and zucchini on top of the chicken and coconut milk.
- Drizzle the olive oil over the vegetables and chicken.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro before serving.
