- Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces
- Coconut milk - 400 ml, full-fat
- Cauliflower - 200 grams, cut into florets
- Green beans - 100 grams, trimmed and cut into 5 cm pieces
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Vietnamese curry powder - 2 tablespoons
- Fish sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Lime juice - 1 tablespoon
- Cilantro - for garnish, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pan, stirring for another minute until fragrant.
- Add the chicken pieces to the pan, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Stir in the Vietnamese curry powder, ensuring the chicken is well coated, and cook for another minute.
- Pour the coconut milk and fish sauce into the pan, mixing well. Bring the mixture to a gentle simmer.
- Add the cauliflower florets and green beans to the pan. Cover and let it simmer for 15-20 minutes, or until the vegetables are tender and the chicken is cooked through.
- Adjust seasoning with lime juice, salt, and pepper to taste. Remove from heat.
- Serve hot, garnished with chopped cilantro.
