Ingredients

  • Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces
  • Coconut milk - 400 ml, full-fat
  • Cauliflower - 200 grams, cut into florets
  • Green beans - 100 grams, trimmed and cut into 5 cm pieces
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Vietnamese curry powder - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro - for garnish, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pan, stirring for another minute until fragrant.
  3. Add the chicken pieces to the pan, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Stir in the Vietnamese curry powder, ensuring the chicken is well coated, and cook for another minute.
  5. Pour the coconut milk and fish sauce into the pan, mixing well. Bring the mixture to a gentle simmer.
  6. Add the cauliflower florets and green beans to the pan. Cover and let it simmer for 15-20 minutes, or until the vegetables are tender and the chicken is cooked through.
  7. Adjust seasoning with lime juice, salt, and pepper to taste. Remove from heat.
  8. Serve hot, garnished with chopped cilantro.
