- Coconut milk - 400 ml
- Vegetable broth - 250 ml
- Potato - 1 medium, diced
- Carrot - 1 medium, sliced
- Sweet potato - 1 medium, diced
- Cauliflower florets - 150 grams
- Green beans - 100 grams, cut into 2-inch pieces
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Curry powder - 2 tablespoons
- Turmeric powder - 1 teaspoon
- Soy sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Fresh cilantro - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until the onion is translucent.
- Stir in the curry powder and turmeric powder, cooking for an additional minute until fragrant.
- Add the diced potato, carrot, and sweet potato to the pot, followed by the vegetable broth and coconut milk. Bring to a boil.
- Once boiling, reduce the heat to low and simmer for 10 minutes, stirring occasionally.
- Add the cauliflower florets and green beans to the pot. Stir in the soy sauce and brown sugar. Season with salt and black pepper to taste.
- Cover and cook for another 15-20 minutes, or until all the vegetables are tender.
- Remove from heat and let it sit for a few minutes. Serve hot, garnished with fresh cilantro, over rice or noodles.
