Ingredients
- Chickpeas - 240 grams (1 can, drained and rinsed)
- Red curry paste - 2 tablespoons
- Coconut milk - 60 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Green onions - 2, chopped
- Bread crumbs - 50 grams
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Burger buns - 2
- Lettuce - 2 leaves
- Cucumber - 1/2, sliced
- Tomato - 1, sliced
- Sriracha sauce - to taste
Steps
- In a large bowl, mash the drained chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the red curry paste, coconut milk, minced garlic, grated ginger, lime juice, chopped cilantro, green onions, bread crumbs, salt, and pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by lightly toasting them in a separate pan or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced cucumber, and tomato. Drizzle with Sriracha sauce if desired.
- Top with the other half of the bun and serve immediately.
