Ingredients

  • Carrots - 200 grams
  • Sea salt - 1 teaspoon
  • Apple cider vinegar - 60 ml
  • Water - 120 ml
  • Honey - 1 teaspoon
  • Garlic - 1 clove, thinly sliced
  • Red chili - 1 small, sliced (optional)

Steps

  1. Peel the carrots and cut them into thin matchstick-sized pieces.
  2. In a bowl, combine the sliced carrots and sea salt, tossing them well to coat. Let them sit for about 10 minutes to draw out moisture.
  3. After 10 minutes, rinse the carrots under cold water and drain them thoroughly.
  4. In a separate bowl, whisk together the apple cider vinegar, water, honey, sliced garlic, and red chili (if using).
  5. Add the drained carrots to the vinegar mixture, ensuring they are fully submerged.
  6. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour before serving. For best results, allow the carrots to pickle overnight.
