- Red chili - 1 small, sliced (optional)
Steps
- Peel the carrots and cut them into thin matchstick-sized pieces.
- In a bowl, combine the sliced carrots and sea salt, tossing them well to coat. Let them sit for about 10 minutes to draw out moisture.
- After 10 minutes, rinse the carrots under cold water and drain them thoroughly.
- In a separate bowl, whisk together the apple cider vinegar, water, honey, sliced garlic, and red chili (if using).
- Add the drained carrots to the vinegar mixture, ensuring they are fully submerged.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour before serving. For best results, allow the carrots to pickle overnight.
