Ingredients

  • Tuna steak - 300 grams
  • Vegetable oil - 2 tablespoons
  • Shallots - 2, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Coconut water - 200 ml
  • Soy sauce - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Chili pepper - 1, sliced (optional)
  • Spring onions - 2, chopped for garnish
  • Fresh coriander - a handful, for garnish

Steps

  1. Cut the tuna steak into bite-sized chunks and set aside.
  2. In a medium pot or skillet, heat the vegetable oil over medium heat. Add the sliced shallots, and sauté until they become translucent.
  3. Add the minced garlic and grated ginger, stirring for another minute until fragrant.
  4. Add the tuna chunks to the pot and sear them for 2-3 minutes, turning occasionally until lightly browned.
  5. Pour in the coconut water, soy sauce, fish sauce, brown sugar, and black pepper. Stir to combine all ingredients.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. If desired, add the sliced chili pepper in the last 5 minutes of cooking for extra heat.
  8. Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with chopped spring onions and fresh coriander.
