  • Turmeric powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Lime wedges - for serving

Steps

  1. Prepare the marinade by combining the finely chopped lemongrass, minced garlic, chopped shallots, fish sauce, brown sugar, turmeric powder, black pepper, and vegetable oil in a bowl.
  2. Place the fish fillets in the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat the grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 15 minutes to prevent burning.
  4. Thread the marinated fish fillets onto skewers if desired, or place them directly on the grill.
  5. Grill the fish for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. Remove the fish from the grill and let it rest for a couple of minutes before serving.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
