- Whole fish (tilapia or mackerel) - 400 grams
- Lemongrass - 2 stalks, finely chopped
- Garlic - 3 cloves, minced
- Shallots - 2, finely sliced
- Fish sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Black pepper - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Green onions - 2, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
Steps
- Preheat your grill to medium-high heat.
- Clean and gut the fish, then pat it dry with paper towels.
- In a bowl, combine lemongrass, garlic, shallots, fish sauce, lime juice, black pepper, olive oil, and salt to create a marinade.
- Rub the marinade all over the fish, including inside the cavity. Let it marinate for at least 15 minutes.
- Place the fish directly on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.
- Remove the fish from the grill and let it rest for a few minutes before garnishing with chopped cilantro and green onions.
- Serve hot with lime wedges on the side.
