Ingredients

  • Whole fish (tilapia or mackerel) - 400 grams
  • Lemongrass - 2 stalks, finely chopped
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely sliced
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Green onions - 2, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat your grill to medium-high heat.
  2. Clean and gut the fish, then pat it dry with paper towels.
  3. In a bowl, combine lemongrass, garlic, shallots, fish sauce, lime juice, black pepper, olive oil, and salt to create a marinade.
  4. Rub the marinade all over the fish, including inside the cavity. Let it marinate for at least 15 minutes.
  5. Place the fish directly on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.
  6. Remove the fish from the grill and let it rest for a few minutes before garnishing with chopped cilantro and green onions.
  7. Serve hot with lime wedges on the side.
