Ingredients

  • Whole fish (such as tilapia or mackerel) - 400 grams
  • Soy sauce - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic, minced - 3 cloves
  • Shallots, minced - 2 tablespoons
  • Lemongrass, finely chopped - 1 stalk
  • Black pepper - 1 teaspoon
  • Chili flakes - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime wedges - for serving

Steps

  1. Clean and prepare the fish by removing scales and gutting it, then rinse under cold water and pat dry.
  2. In a bowl, mix together soy sauce, fish sauce, brown sugar, minced garlic, minced shallots, lemongrass, black pepper, chili flakes, and vegetable oil to create a marinade.
  3. Place the fish in a shallow dish and pour the marinade over it, ensuring the fish is well-coated. Cover and refrigerate for at least 20 minutes.
  4. Preheat your grill or barbecue to medium-high heat.
  5. Remove the fish from the marinade and place it on the grill. Cook for about 6-8 minutes per side, or until the fish is cooked through and has nice grill marks.
  6. Once cooked, remove the fish from the grill and let it rest for a few minutes.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
