Ingredients

  • Whole fish (such as mackerel or tilapia) - 500g
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Fresh ginger, grated - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut oil - 2 tablespoons
  • Fresh coriander, chopped - 30g
  • Fresh mint leaves, chopped - 30g
  • Lettuce leaves - 4 large leaves
  • Sliced cucumbers - 100g

Steps

  1. Preheat the grill to medium-high heat.
  2. Clean the fish thoroughly and make shallow diagonal cuts on both sides.
  3. In a bowl, mix together fish sauce, lime juice, minced garlic, grated ginger, chili flakes, black pepper, and coconut oil to create a marinade.
  4. Rub the marinade all over the fish, making sure to get it into the cuts and inside the cavity. Let it marinate for at least 30 minutes.
  5. Once marinated, place the fish on the grill and cook for about 20 minutes, turning halfway through, until the fish is cooked through and has nice grill marks.
  6. Remove the fish from the grill and let it rest for a few minutes.
  7. Serve the grilled fish on a platter, garnished with fresh coriander and mint leaves, alongside lettuce leaves and sliced cucumbers.
