Ingredients
- Whole fish (such as mackerel or tilapia) - 500g
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Garlic, minced - 3 cloves
- Fresh ginger, grated - 1 tablespoon
- Chili flakes - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Coconut oil - 2 tablespoons
- Fresh coriander, chopped - 30g
- Fresh mint leaves, chopped - 30g
- Lettuce leaves - 4 large leaves
- Sliced cucumbers - 100g
Steps
- Preheat the grill to medium-high heat.
- Clean the fish thoroughly and make shallow diagonal cuts on both sides.
- In a bowl, mix together fish sauce, lime juice, minced garlic, grated ginger, chili flakes, black pepper, and coconut oil to create a marinade.
- Rub the marinade all over the fish, making sure to get it into the cuts and inside the cavity. Let it marinate for at least 30 minutes.
- Once marinated, place the fish on the grill and cook for about 20 minutes, turning halfway through, until the fish is cooked through and has nice grill marks.
- Remove the fish from the grill and let it rest for a few minutes.
- Serve the grilled fish on a platter, garnished with fresh coriander and mint leaves, alongside lettuce leaves and sliced cucumbers.
