Ingredients

  • Whole fish (such as tilapia or mackerel) - 400 grams
  • Banana leaves - 2 large pieces
  • Lemongrass - 2 stalks, finely chopped
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Chili peppers - 1, finely sliced
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Brown sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh herbs (such as coriander and mint) - 1/2 cup, chopped

Steps

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the lemongrass, garlic, shallots, chili peppers, fish sauce, lime juice, brown sugar, salt, and black pepper to create a marinade.
  3. Clean the fish thoroughly and score the skin on both sides to allow the marinade to penetrate.
  4. Rub the marinade generously all over the fish, including inside the cavity, and let it marinate for at least 10 minutes.
  5. While the fish is marinating, prepare the banana leaves by briefly passing them over an open flame or hot water to make them pliable.
  6. Place half of the chopped fresh herbs on the banana leaves, then lay the marinated fish on top of the herbs.
  7. Top the fish with the remaining fresh herbs and fold the banana leaves over to create a secure package.
  8. Place the wrapped fish on the grill and cook for about 15-20 minutes, turning occasionally, until the fish is cooked through and flakes easily with a fork.
  9. Remove the fish from the grill, unwrap the banana leaves, and serve hot with steamed rice and extra lime wedges.
