  • Fish sauce - 2 tablespoons
  • Lime - 1, juiced
  • Black pepper - 1/2 teaspoon
  • Chili flakes (optional) - 1/4 teaspoon
  • Salt - to taste
  • Fresh herbs (mint, cilantro) - for garnish

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a small bowl, mix the vegetable oil, minced garlic, fish sauce, lime juice, black pepper, and chili flakes to create a marinade.
  3. Rub the marinade over the fish fillets, ensuring they are well coated. Let them marinate for 15 minutes.
  4. While the fish is marinating, finely chop the scallions and set aside.
  5. After marinating, place the fish fillets on the preheated grill. Cook for 4-5 minutes on each side or until the fish is cooked through and flakes easily.
  6. In a small saucepan, heat a little oil over low heat and add the chopped scallions. Sauté for 2-3 minutes until fragrant but not browned.
  7. Once the fish is done, remove it from the grill and transfer to a serving plate.
