- Scallions - 4 stalks
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fish sauce - 2 tablespoons
- Lime - 1, juiced
- Black pepper - 1/2 teaspoon
- Chili flakes (optional) - 1/4 teaspoon
- Salt - to taste
- Fresh herbs (mint, cilantro) - for garnish
Steps
- Preheat a grill or grill pan over medium-high heat.
- In a small bowl, mix the vegetable oil, minced garlic, fish sauce, lime juice, black pepper, and chili flakes to create a marinade.

- While the fish is marinating, finely chop the scallions and set aside.
- After marinating, place the fish fillets on the preheated grill. Cook for 4-5 minutes on each side or until the fish is cooked through and flakes easily.
- In a small saucepan, heat a little oil over low heat and add the chopped scallions. Sauté for 2-3 minutes until fragrant but not browned.
- Once the fish is done, remove it from the grill and transfer to a serving plate.
- Top the grilled fish with the sautéed scallions and garnish with fresh herbs.
- Serve hot with steamed rice or fresh vegetables.
