- White fish fillets (tilapia or catfish) - 300 grams
- Fresh turmeric root - 20 grams (or 1 tsp turmeric powder)
- Garlic - 2 cloves
- Shallots - 2 medium
- Fish sauce - 2 tbsp
- Lime juice - 1 tbsp
- Sugar - 1 tsp
- Black pepper - 1/2 tsp
- Fresh turmeric leaves (or banana leaves) - 4 large leaves
- Vegetable oil - 1 tbsp
Steps
- Rinse the fish fillets under cold water and pat them dry with a paper towel.
- In a blender, combine fresh turmeric root, garlic, shallots, fish sauce, lime juice, sugar, and black pepper. Blend until smooth.
- Marinate the fish fillets in the turmeric mixture for at least 15 minutes, allowing the flavors to penetrate.
- While the fish is marinating, preheat your grill or grill pan over medium heat.
- Take the turmeric leaves and gently wipe them with a damp cloth to clean. If using banana leaves, cut them into large squares.
- Place a marinated fillet in the center of each leaf and fold the leaves around the fish, securing them with toothpicks or kitchen twine.
- Brush the outside of the wrapped fish with vegetable oil to prevent sticking.
- Grill the wrapped fish for about 10-12 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
- Remove the fish from the grill and let it rest for a couple of minutes before unwrapping.
- Serve hot with rice and fresh herbs for garnish.
