Ingredients
- White fish fillets (like tilapia or snapper) - 300 grams
- Banana leaves - 2 large pieces
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Lemongrass - 1 stalk, finely chopped
- Fish sauce - 2 tablespoons
- Coconut sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Olive oil - 1 tablespoon
Steps
- In a mixing bowl, combine minced garlic, chopped shallots, chopped lemongrass, fish sauce, coconut sugar, black pepper, turmeric powder, lime juice, and olive oil to create the marinade.
- Add the white fish fillets to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 20 minutes.
- While the fish is marinating, prepare the banana leaves by briefly passing them over an open flame or boiling water to make them pliable.
- Once marinated, take the fish fillets and place them in the center of each banana leaf piece. Sprinkle chopped cilantro over the fish.
- Wrap the banana leaves tightly around the fish, securing them with kitchen twine or toothpicks if necessary.
- Preheat your grill to medium-high heat. Place the wrapped fish parcels on the grill and cook for about 15-20 minutes, turning occasionally until the fish is cooked through and the leaves are charred.
- Remove from the grill, unwrap carefully, and serve immediately with additional lime wedges and fresh herbs.
