Steps

  1. In a mixing bowl, combine minced garlic, chopped shallots, chopped lemongrass, fish sauce, coconut sugar, black pepper, turmeric powder, lime juice, and olive oil to create the marinade.
  2. Add the white fish fillets to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 20 minutes.
  3. While the fish is marinating, prepare the banana leaves by briefly passing them over an open flame or boiling water to make them pliable.
  4. Once marinated, take the fish fillets and place them in the center of each banana leaf piece. Sprinkle chopped cilantro over the fish.
  5. Wrap the banana leaves tightly around the fish, securing them with kitchen twine or toothpicks if necessary.
