- Fresh lime leaves - 8 leaves
- Garlic - 3 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Honey - 1 teaspoon
- Black pepper - 1/2 teaspoon

Steps
- In a bowl, mix the minced garlic, grated ginger, soy sauce, fish sauce, lime juice, honey, black pepper, and vegetable oil to create a marinade.
- Place the fish fillets in the marinade and let them sit for 15 minutes to absorb the flavors.
- While the fish is marinating, preheat your grill or oven to medium-high heat.
- Take a lime leaf, place a marinated fish fillet on it, and then top it with another lime leaf. Secure with toothpicks if necessary.
- Repeat the process for all fish fillets.
- Grill the fish for about 5-7 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
- Once done, remove from the grill and let it rest for a couple of minutes.
- Garnish with fresh cilantro before serving.
