- Eggplant - 300 grams
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Brown sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Lettuce leaves - 4 large
- Rice noodles - 100 grams (cooked according to package instructions)
- Chili pepper - 1, sliced (optional)
- Peanuts - 2 tablespoons, crushed (for garnish)
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the eggplant into thick fillets, about 1 inch in thickness.
- In a bowl, mix soy sauce, lime juice, sesame oil, minced garlic, grated ginger, brown sugar, and black pepper to create a marinade.
- Place the eggplant slices in the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- Grill the marinated eggplant for about 6-8 minutes on each side, or until they are tender and have grill marks.
- While the eggplant is grilling, prepare the dipping sauce by mixing lime juice, a pinch of salt, and a drizzle of soy sauce in a small bowl.
- Once the eggplant is done, remove it from the grill and let it rest for a couple of minutes.
- To serve, place the grilled eggplant on a bed of lettuce leaves, add cooked rice noodles, and top with fresh cilantro, mint, sliced chili pepper, and crushed peanuts.
- Serve with the dipping sauce on the side.
