Ingredients

  • Eggplant - 300 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Brown sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Lettuce leaves - 4 large
  • Rice noodles - 100 grams (cooked according to package instructions)
  • Chili pepper - 1, sliced (optional)
  • Peanuts - 2 tablespoons, crushed (for garnish)

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the eggplant into thick fillets, about 1 inch in thickness.
  3. In a bowl, mix soy sauce, lime juice, sesame oil, minced garlic, grated ginger, brown sugar, and black pepper to create a marinade.
  4. Place the eggplant slices in the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  5. Grill the marinated eggplant for about 6-8 minutes on each side, or until they are tender and have grill marks.
  6. While the eggplant is grilling, prepare the dipping sauce by mixing lime juice, a pinch of salt, and a drizzle of soy sauce in a small bowl.
  7. Once the eggplant is done, remove it from the grill and let it rest for a couple of minutes.
  8. To serve, place the grilled eggplant on a bed of lettuce leaves, add cooked rice noodles, and top with fresh cilantro, mint, sliced chili pepper, and crushed peanuts.
  9. Serve with the dipping sauce on the side.
