Ingredients

  • Mackerel - 400 grams
  • Lemongrass - 2 stalks, finely chopped

  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Ground black pepper - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste

Steps

  1. Preheat your grill or oven to medium-high heat.
  2. In a bowl, combine the finely chopped lemongrass, minced garlic, fish sauce, lime juice, ground black pepper, and olive oil to create a marinade.
  3. Clean the mackerel and make a few diagonal cuts on each side to allow the marinade to penetrate.
  4. Rub the marinade all over the mackerel, making sure it gets into the cuts. Let it marinate for at least 15 minutes.
  5. Season the mackerel with salt to taste before grilling.
  6. Place the mackerel on the grill or in the oven, and cook for about 6-8 minutes on each side, or until the fish is cooked through and the skin is crispy.
  7. Once cooked, remove from the grill and let it rest for a few minutes.
