  • Lemon juice - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Brown sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2 stalks, chopped
  • Lettuce leaves - for serving
  • Lime wedges - for garnish

Steps

  1. In a bowl, combine fish sauce, lemon juice, minced garlic, grated ginger, brown sugar, and black pepper to create the marinade.
  2. Add the cleaned mackerel fillets to the marinade, ensuring they are well-coated. Cover and let marinate for at least 15 minutes.
  3. Preheat the grill to medium heat.
  4. Remove the mackerel from the marinade and let excess marinade drip off.
  5. Place the mackerel fillets on the grill, skin side down, and grill for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. Once done, remove from the grill and sprinkle with chopped cilantro and green onions.
  7. Serve the grilled mackerel on a bed of lettuce leaves with lime wedges on the side.
