- Mackerel - 400 grams (2 whole fish)
- Lemongrass - 1 stalk, finely chopped
- Garlic - 3 cloves, minced
- Shallots - 2, minced
- Fresh chili - 1, finely chopped (adjust to taste)
- Fish sauce - 2 tablespoons
- Olive oil - 1 tablespoon
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Preheat the grill to medium-high heat.
- Clean and gut the mackerel, then pat dry with paper towels.
- In a bowl, mix the lemongrass, garlic, shallots, chili, fish sauce, olive oil, black pepper, and salt to create a marinade.
- Rub the marinade all over the mackerel, ensuring it's well-coated inside and out. Let it marinate for at least 15 minutes.
- Place the mackerel on the grill, cooking for 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
- Remove from the grill and let rest for a couple of minutes.
- Serve garnished with fresh cilantro and lime wedges.
