Ingredients

  • Mackerel - 400 grams (2 whole fish)
  • Lemongrass - 1 stalk, finely chopped
  • Garlic - 3 cloves, minced
  • Shallots - 2, minced
  • Fresh chili - 1, finely chopped (adjust to taste)
  • Fish sauce - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Preheat the grill to medium-high heat.
  2. Clean and gut the mackerel, then pat dry with paper towels.
  3. In a bowl, mix the lemongrass, garlic, shallots, chili, fish sauce, olive oil, black pepper, and salt to create a marinade.
  4. Rub the marinade all over the mackerel, ensuring it's well-coated inside and out. Let it marinate for at least 15 minutes.
  5. Place the mackerel on the grill, cooking for 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. Remove from the grill and let rest for a couple of minutes.
  7. Serve garnished with fresh cilantro and lime wedges.
