  • Fish sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Shallots - 2, thinly sliced
  • Garlic - 3 cloves, minced
  • Fresh ginger - 1 tablespoon, sliced
  • Red chili - 1, sliced (optional)
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Water - 200 ml
  • Green onions - 2, chopped (for garnish)
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. Heat the vegetable oil in a medium pot over medium heat.
  2. Add the sliced shallots, minced garlic, and ginger to the pot, sautéing until fragrant and slightly golden.
  3. Stir in the soy sauce, fish sauce, brown sugar, and black pepper, mixing well.
  4. Add the mackerel pieces to the pot, gently turning to coat them in the sauce.
  5. Pour in the water and bring the mixture to a gentle boil.
  6. Reduce the heat to low, cover the pot and let it simmer for about 15-20 minutes, or until the mackerel is cooked through and tender.
  7. If desired, add sliced red chili for extra heat and cook for an additional 2-3 minutes.
  8. Once done, remove from heat and garnish with chopped green onions and cilantro before serving.
