  • Red chili - 1, sliced (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Water - 200 milliliters
  • Fresh cilantro - for garnish

Steps

  1. In a medium bowl, mix the shrimp paste, fish sauce, sugar, minced garlic, and black pepper together to create a marinade.
  2. Add the cleaned mackerel pieces to the marinade, ensuring they are well coated. Let it marinate for 15 minutes.
  3. Heat vegetable oil in a pan over medium heat. Add the sliced ginger and red chili, sautéing until fragrant.
  4. Add the marinated mackerel to the pan and sear for about 3 minutes on each side until slightly browned.
  5. Pour in the water and bring it to a simmer. Cover and cook for 10-15 minutes, or until the fish is cooked through and the sauce thickens slightly.
