- Mackerel fish - 400 grams, cleaned and cut into fillets
- Fish sauce - 3 tablespoons
- Shallots - 2, finely sliced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Coconut sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Chili pepper - 1, sliced (optional)
- Water - 200 milliliters
- Fresh cilantro - a handful, for garnish
Steps
- In a pot, heat 2 tablespoons of fish sauce over medium heat and add the sliced shallots, cooking until they are soft and aromatic.
- Add the minced garlic and grated ginger to the pot, stirring for another minute until fragrant.
- Put the mackerel fillets into the pot, skin side down, and sprinkle with coconut sugar, black pepper, and the remaining tablespoon of fish sauce.
- Pour in the water and bring the mixture to a gentle simmer.
- Cover the pot and let it cook for about 15-20 minutes, or until the fish is cooked through and the sauce has thickened slightly.
- If using, add the sliced chili pepper in the last 5 minutes of cooking for added heat.
- Serve hot, garnished with fresh cilantro, alongside steamed rice.
