Ingredients

  • Mackerel fish - 400 grams, cleaned and cut into fillets
  • Fish sauce - 3 tablespoons
  • Shallots - 2, finely sliced
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Coconut sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Chili pepper - 1, sliced (optional)
  • Water - 200 milliliters
  • Fresh cilantro - a handful, for garnish

Steps

  1. In a pot, heat 2 tablespoons of fish sauce over medium heat and add the sliced shallots, cooking until they are soft and aromatic.
  2. Add the minced garlic and grated ginger to the pot, stirring for another minute until fragrant.
  3. Put the mackerel fillets into the pot, skin side down, and sprinkle with coconut sugar, black pepper, and the remaining tablespoon of fish sauce.
  4. Pour in the water and bring the mixture to a gentle simmer.
  5. Cover the pot and let it cook for about 15-20 minutes, or until the fish is cooked through and the sauce has thickened slightly.
  6. If using, add the sliced chili pepper in the last 5 minutes of cooking for added heat.
  7. Serve hot, garnished with fresh cilantro, alongside steamed rice.
