- Jasmine rice - 150 grams
- Coconut milk - 200 ml
- Water - 100 ml
- Ripe mango - 1 medium, diced
- Red bell pepper - 1 small, diced
- Carrot - 1 medium, julienned
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Roasted peanuts - 30 grams, chopped (for garnish)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and black pepper. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice cooks, heat olive oil in a skillet over medium heat. Add the diced red bell pepper and julienned carrot, sautéing for about 5 minutes until slightly tender.
- Once the rice is cooked, fluff it with a fork and allow it to cool slightly before mixing in the sautéed vegetables, fresh mango, chopped cilantro, and lime juice.
- Serve warm, garnished with chopped roasted peanuts and additional cilantro if desired.
