Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Ripe mango - 1 medium, diced
  • Red bell pepper - 1 small, diced
  • Carrot - 1 medium, julienned
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Roasted peanuts - 30 grams, chopped (for garnish)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and black pepper. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  4. While the rice cooks, heat olive oil in a skillet over medium heat. Add the diced red bell pepper and julienned carrot, sautéing for about 5 minutes until slightly tender.
  5. Once the rice is cooked, fluff it with a fork and allow it to cool slightly before mixing in the sautéed vegetables, fresh mango, chopped cilantro, and lime juice.
  6. Serve warm, garnished with chopped roasted peanuts and additional cilantro if desired.
