- Jasmine rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, diced
- Carrots - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Corn kernels - 100 grams (fresh or frozen)
- Soy sauce - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Green onions - 2, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a pot, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the minced garlic and diced shallots to the skillet, sautéing for 2-3 minutes until fragrant.
- Stir in the diced carrots and bell pepper, cooking for about 5 minutes until they start to soften.
- Add the green peas and corn to the skillet, cooking for an additional 3-4 minutes.
- Fluff the cooked rice with a fork and add it to the skillet with the vegetables.
- Pour in the soy sauce and sprinkle with black pepper. Stir well to combine all ingredients, cooking for another 2-3 minutes until everything is heated through.
- Remove from heat and fold in the chopped green onions and cilantro.
- Serve warm, garnished with lime wedges.
