  • Black pepper - 1/2 teaspoon
  • Green onions, chopped - 2 stalks
  • Fresh cilantro, for garnish - a handful

Steps

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and diced onion, sautéing until the onion becomes translucent, about 2-3 minutes.
  3. Stir in the julienned carrot, diced red bell pepper, and zucchini, cooking for another 3-4 minutes until the vegetables are slightly tender.
  4. Add the sliced shiitake mushrooms and the frozen mixed seafood to the skillet, cooking for an additional 5 minutes until heated through.
  5. Add the cooked jasmine rice to the skillet, breaking up any clumps and mixing thoroughly with the vegetables.
  6. Pour in the soy sauce and vegetarian oyster sauce, stirring well to combine all ingredients evenly.
  7. Season with black pepper, adjust to taste, and cook for another 2-3 minutes until everything is heated through.
  8. Remove from heat and stir in the chopped green onions.
  9. Serve hot, garnished with fresh cilantro.
