- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, diced
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Soy sauce (Kosher) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - a handful, chopped (for garnish)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a pot, bring 300 ml of water to a boil, add the soaked rice, and cook on low heat for about 15-20 minutes until the water is absorbed and the rice is tender. Let it cool.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the mixed seafood to the pan and cook for about 3-4 minutes until they are opaque and cooked through.
- Stir in the julienned carrot and diced bell pepper, cooking for another 2-3 minutes until the vegetables are slightly tender.
- Add the cooled rice to the pan, breaking up any clumps. Stir well to combine with the seafood and vegetables.
- Pour the soy sauce and sesame oil over the rice, mixing thoroughly to coat all the ingredients evenly.
- Season with salt and black pepper, adjusting to taste. Cook for another 3-4 minutes, stirring continuously.
- Remove from heat, add chopped green onions and cilantro, and mix well before serving.
