- Duck legs - 2 pieces (about 500g)
- Sấu fruit (Vietnamese sour fruits) - 4 pieces
- Jasmine rice - 200g
- Shallots - 2 medium, finely chopped
- Garlic - 3 cloves, minced
- Fish sauce - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Chicken broth - 500ml
- Fresh cilantro - for garnish
- Green onions - 2 stalks, chopped
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant and golden brown.
- Add the duck legs to the pot, browning them on all sides for about 5-7 minutes.
- Season the duck with fish sauce, salt, and black pepper. Add the sấu fruits to the pot, followed by the chicken broth.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the duck is tender.
- While the duck is cooking, drain the soaked rice and steam it in a rice cooker or pot until fluffy (about 15-20 minutes).
- Once the duck is cooked, remove it from the pot and let it rest for a few minutes. Meanwhile, let the sauce reduce for another 5 minutes on medium heat.
- Serve the steamed rice on plates, top with the duck legs, and spoon the sauce and sấu over the top.
- Garnish with fresh cilantro and chopped green onions before serving.
