Ingredients

  • Duck legs - 2 pieces (about 500g)
  • Sấu fruit (Vietnamese sour fruits) - 4 pieces
  • Jasmine rice - 200g
  • Shallots - 2 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Fish sauce - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Chicken broth - 500ml
  • Fresh cilantro - for garnish
  • Green onions - 2 stalks, chopped

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant and golden brown.
  3. Add the duck legs to the pot, browning them on all sides for about 5-7 minutes.
  4. Season the duck with fish sauce, salt, and black pepper. Add the sấu fruits to the pot, followed by the chicken broth.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the duck is tender.
  6. While the duck is cooking, drain the soaked rice and steam it in a rice cooker or pot until fluffy (about 15-20 minutes).
  7. Once the duck is cooked, remove it from the pot and let it rest for a few minutes. Meanwhile, let the sauce reduce for another 5 minutes on medium heat.
  8. Serve the steamed rice on plates, top with the duck legs, and spoon the sauce and sấu over the top.
  9. Garnish with fresh cilantro and chopped green onions before serving.
