Ingredients

  • Jasmine rice - 150 grams
  • Green mung beans - 75 grams
  • Water - 500 ml
  • Salt - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Shallots - 1 small, thinly sliced
  • Fresh coriander - 2 tablespoons, chopped
  • Spring onions - 2 stalks, chopped
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice and green mung beans under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice, mung beans, water, and salt. Bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes or until the water is absorbed and both the rice and mung beans are tender.
  4. In a separate pan, heat vegetable oil over medium heat. Add minced garlic and sliced shallots, sautéing until golden and fragrant.
  5. Once the rice and mung beans are cooked, fluff them with a fork and gently stir in the sautéed garlic and shallots.
  6. Serve hot, garnished with chopped fresh coriander, spring onions, and a sprinkle of black pepper.
