- Fresh coriander - 2 tablespoons, chopped
- Spring onions - 2 stalks, chopped

Steps
- Rinse the jasmine rice and green mung beans under cold water until the water runs clear.
- In a pot, combine the rinsed rice, mung beans, water, and salt. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 20 minutes or until the water is absorbed and both the rice and mung beans are tender.
- In a separate pan, heat vegetable oil over medium heat. Add minced garlic and sliced shallots, sautéing until golden and fragrant.
- Once the rice and mung beans are cooked, fluff them with a fork and gently stir in the sautéed garlic and shallots.
- Serve hot, garnished with chopped fresh coriander, spring onions, and a sprinkle of black pepper.
