Ingredients
- Jasmine rice - 150 grams
- Firm tofu - 200 grams
- Broccoli florets - 100 grams
- Carrot - 1 medium (about 70 grams)
- Red bell pepper - 1 medium (about 150 grams)
- Garlic - 3 cloves
- Soy sauce - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2 stalks
- Fresh basil or cilantro - a handful (optional)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions (usually about 15-20 minutes).
- While the rice is cooking, press the tofu to remove excess moisture, then cut it into bite-sized cubes.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Once hot, add the tofu and fry until golden brown on all sides (about 8-10 minutes). Remove tofu from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add broccoli florets, sliced carrot, and red bell pepper to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Return the tofu to the pan with the vegetables. Pour in soy sauce, sesame oil, and season with salt and black pepper to taste. Stir-fry for another 2-3 minutes to combine flavors.
- Fluff the cooked rice with a fork and serve it on plates topped with the stir-fried tofu and vegetable mixture.
- Garnish with chopped green onions and fresh basil or cilantro if desired.
