Ingredients

  • Jasmine rice - 150 grams
  • Firm tofu - 200 grams
  • Broccoli florets - 100 grams
  • Carrot - 1 medium (about 70 grams)
  • Red bell pepper - 1 medium (about 150 grams)
  • Garlic - 3 cloves
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks
  • Fresh basil or cilantro - a handful (optional)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions (usually about 15-20 minutes).
  2. While the rice is cooking, press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  3. Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Once hot, add the tofu and fry until golden brown on all sides (about 8-10 minutes). Remove tofu from the pan and set aside.
  4. In the same pan, add the remaining 1 tablespoon of vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add broccoli florets, sliced carrot, and red bell pepper to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  6. Return the tofu to the pan with the vegetables. Pour in soy sauce, sesame oil, and season with salt and black pepper to taste. Stir-fry for another 2-3 minutes to combine flavors.
  7. Fluff the cooked rice with a fork and serve it on plates topped with the stir-fried tofu and vegetable mixture.
  8. Garnish with chopped green onions and fresh basil or cilantro if desired.
