- Jasmine rice - 100 grams
- Firm tofu - 200 grams
- Tomato - 2 medium (about 200 grams)
- Onion - 1 small (about 50 grams)
- Garlic - 2 cloves
- Vegetable oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2 stalks
- Fresh basil - a handful
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically with 200 ml of water for 100 grams of rice.
- While the rice is cooking, press the firm tofu to remove excess moisture and then cut it into cubes.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the tofu cubes and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
- In the same pan, add another tablespoon of vegetable oil. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes.
- Chop the tomatoes and add them to the pan. Cook until the tomatoes break down and form a sauce, about 5-7 minutes.
- Stir in the soy sauce, sugar, and season with salt and black pepper to taste. Simmer for another 2 minutes.
- Return the crispy tofu to the pan and toss to coat in the sauce. Cook for an additional 2 minutes until heated through.
- Serve the cooked rice on plates, topped with the tofu and tomato sauce. Garnish with chopped green onions and fresh basil before serving.
