Ingredients

  • Jasmine rice - 100 grams
  • Firm tofu - 200 grams
  • Tomato - 2 medium (about 200 grams)
  • Onion - 1 small (about 50 grams)
  • Garlic - 2 cloves
  • Vegetable oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks
  • Fresh basil - a handful

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically with 200 ml of water for 100 grams of rice.
  2. While the rice is cooking, press the firm tofu to remove excess moisture and then cut it into cubes.
  3. Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the tofu cubes and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same pan, add another tablespoon of vegetable oil. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes.
  5. Chop the tomatoes and add them to the pan. Cook until the tomatoes break down and form a sauce, about 5-7 minutes.
  6. Stir in the soy sauce, sugar, and season with salt and black pepper to taste. Simmer for another 2 minutes.
  7. Return the crispy tofu to the pan and toss to coat in the sauce. Cook for an additional 2 minutes until heated through.
  8. Serve the cooked rice on plates, topped with the tofu and tomato sauce. Garnish with chopped green onions and fresh basil before serving.
