Ingredients
- Jasmine rice - 150 grams
- Firm tofu - 200 grams
- Bell pepper (red or yellow) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Broccoli florets - 100 grams
- Garlic - 2 cloves, minced
- Soy sauce - 3 tablespoons
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 teaspoon
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish (optional)
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using 1.5 cups of water for 150 grams of rice.
- While the rice is cooking, press the firm tofu to remove excess moisture. Cut the tofu into 1-inch cubes.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Then, add the sliced bell pepper, julienned carrot, and broccoli florets. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Return the crispy tofu to the skillet with the vegetables. Pour in the soy sauce and sesame oil, stirring to combine. Season with salt and black pepper to taste. Cook for an additional 2 minutes.
- Once the rice is done, fluff it with a fork and divide it between two plates. Top with the tofu and vegetable mixture.
- Garnish with chopped green onions and cilantro if desired. Serve hot.
