Ingredients

  • Pork belly - 300 grams
  • Eggs - 2 large
  • Coconut water - 200 ml
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Shallots - 2 medium, minced
  • Garlic - 3 cloves, minced
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Cooked jasmine rice - 400 grams
  • Green onions - 2 stalks, chopped for garnish

Steps

  1. In a pot, boil water and gently add the eggs. Cook for 8-10 minutes for hard-boiled eggs. Remove and place in cold water to cool.
  2. Cut the pork belly into bite-sized pieces. In a large pan, heat the vegetable oil over medium heat and add the minced shallots and garlic. Sauté until fragrant.
  3. Add the pork belly to the pan and cook until browned on all sides.
  4. Stir in the fish sauce, soy sauce, brown sugar, black pepper, and coconut water. Bring to a simmer, cover the pan, and let it cook for about 30 minutes, stirring occasionally.
  5. While the pork is cooking, peel the cooled eggs and set aside.
  6. After 30 minutes, add the hard-boiled eggs to the pan and let everything simmer together for another 10 minutes.
  7. Serve the braised pork and eggs over jasmine rice, garnished with chopped green onions.
