- Pork belly - 300 grams
- Shallots - 2 medium, finely chopped
- Garlic - 3 cloves, minced
- Coconut water - 200 ml
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Jasmine rice - 150 grams
- Water - 300 ml
- Green onions - 2 stalks, chopped for garnish
- Red chili - 1, sliced for garnish (optional)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat a little oil over medium heat and sauté the chopped shallots and minced garlic until fragrant.
- Cut the pork belly into bite-sized pieces and add it to the pot, browning it on all sides.
- Add sugar to the pot and cook until it caramelizes, stirring constantly to prevent burning.
- Pour in the coconut water, fish sauce, soy sauce, and black pepper, and stir well to combine.
- Cover the pot and let it simmer on low heat for about 40-50 minutes, until the pork is tender and the sauce thickens.
- While the pork is cooking, drain the soaked rice and add it to a separate pot with 300 ml of water. Bring it to a boil, then reduce the heat to low, cover, and cook for 15 minutes until the rice is fluffy.
- Once the pork is tender, taste and adjust seasoning if needed. Serve the pork over a bed of jasmine rice, garnished with chopped green onions and sliced red chili if desired.
