Ingredients

  • Pork belly - 300 grams
  • Shallots - 2 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Coconut water - 200 ml
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Green onions - 2 stalks, chopped for garnish
  • Red chili - 1, sliced for garnish (optional)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat a little oil over medium heat and sauté the chopped shallots and minced garlic until fragrant.
  3. Cut the pork belly into bite-sized pieces and add it to the pot, browning it on all sides.
  4. Add sugar to the pot and cook until it caramelizes, stirring constantly to prevent burning.
  5. Pour in the coconut water, fish sauce, soy sauce, and black pepper, and stir well to combine.
  6. Cover the pot and let it simmer on low heat for about 40-50 minutes, until the pork is tender and the sauce thickens.
  7. While the pork is cooking, drain the soaked rice and add it to a separate pot with 300 ml of water. Bring it to a boil, then reduce the heat to low, cover, and cook for 15 minutes until the rice is fluffy.
  8. Once the pork is tender, taste and adjust seasoning if needed. Serve the pork over a bed of jasmine rice, garnished with chopped green onions and sliced red chili if desired.
