Ingredients

  • Jasmine rice - 150 grams
  • Chicken breast (Halal) - 100 grams
  • Shrimp (peeled and deveined) - 100 grams
  • Carrot (julienned) - 50 grams
  • Bell pepper (sliced) - 50 grams
  • Green peas - 50 grams
  • Garlic (minced) - 2 cloves
  • Soy sauce (Halal) - 30 ml
  • Oyster sauce (Halal) - 15 ml
  • Sesame oil - 10 ml
  • Cooking oil - 15 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Spring onions (chopped) - 2 tablespoons

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, marinate the chicken breast and shrimp with soy sauce, oyster sauce, sesame oil, salt, and black pepper for 15 minutes.
  3. Heat the cooking oil in a large skillet or wok over medium heat. Add the minced garlic and sauté until fragrant.
  4. Add the marinated chicken to the skillet and cook for about 5 minutes until browned. Then, add the shrimp and cook until they turn pink, about 3 minutes.
  5. Stir in the julienned carrot, sliced bell pepper, and green peas. Cook for another 5 minutes until the vegetables are tender but still crisp.
  6. Meanwhile, cook the soaked jasmine rice in a rice cooker or in a pot with 300 ml of water until fluffy, about 15-20 minutes.
  7. Once the rice is done, fluff it with a fork and serve it on plates. Top with the stir-fried chicken and shrimp mixture.
  8. Garnish with chopped spring onions before serving.
