Ingredients
- Jasmine rice - 150 grams
- Chicken breast (Halal) - 100 grams
- Shrimp (peeled and deveined) - 100 grams
- Carrot (julienned) - 50 grams
- Bell pepper (sliced) - 50 grams
- Green peas - 50 grams
- Garlic (minced) - 2 cloves
- Soy sauce (Halal) - 30 ml
- Oyster sauce (Halal) - 15 ml
- Sesame oil - 10 ml
- Cooking oil - 15 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Spring onions (chopped) - 2 tablespoons
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, marinate the chicken breast and shrimp with soy sauce, oyster sauce, sesame oil, salt, and black pepper for 15 minutes.
- Heat the cooking oil in a large skillet or wok over medium heat. Add the minced garlic and sauté until fragrant.
- Add the marinated chicken to the skillet and cook for about 5 minutes until browned. Then, add the shrimp and cook until they turn pink, about 3 minutes.
- Stir in the julienned carrot, sliced bell pepper, and green peas. Cook for another 5 minutes until the vegetables are tender but still crisp.
- Meanwhile, cook the soaked jasmine rice in a rice cooker or in a pot with 300 ml of water until fluffy, about 15-20 minutes.
- Once the rice is done, fluff it with a fork and serve it on plates. Top with the stir-fried chicken and shrimp mixture.
- Garnish with chopped spring onions before serving.
