Ingredients

  • Cauliflower - 1 medium head
  • Shrimp (peeled and deveined) - 300 grams
  • Bell pepper (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Garlic (minced) - 3 cloves
  • Green onion (sliced) - 2 stalks
  • Coconut aminos - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Remove the leaves from the cauliflower, cut it into florets, and pulse in a food processor until it resembles rice.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cauliflower rice and sauté for about 5 minutes, stirring occasionally until tender. Season with salt and pepper, then remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant.
  4. Add the shrimp to the skillet and cook for about 3-4 minutes until they turn pink and opaque. Remove the shrimp and set aside.
  5. In the same skillet, add the sliced bell pepper and julienned carrot. Stir-fry for about 3-4 minutes until they are slightly tender.
  6. Return the cooked shrimp to the skillet along with the coconut aminos, fish sauce, lime juice, and half of the green onions. Stir well to combine and cook for an additional 2 minutes.
  7. Serve the shrimp and vegetables over the cauliflower rice, garnished with the remaining green onions and chopped cilantro.
