  • Shallots, minced - 2
  • Fish sauce - 2 tablespoons
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Green onions, chopped - 2 tablespoons
  • Coriander (cilantro), chopped - for garnish
  • Lime wedges - for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using a rice cooker or boiling in water for about 15 minutes.
  2. While the rice is cooking, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add minced garlic and shallots, sautéing until fragrant and golden, about 2-3 minutes.
  3. Add the sliced pork to the skillet, cooking until browned and cooked through, about 5-7 minutes. Stir in 1 tablespoon of fish sauce, soy sauce, sugar, and black pepper, mixing well. Remove the pork from the skillet and set aside.
  4. In the same skillet, add another tablespoon of vegetable oil. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Stir in the remaining tablespoon of fish sauce.
  5. Once the rice is cooked, fluff it with a fork and divide it between two plates. Top with the cooked pork and shrimp mixture.
  6. Garnish with chopped green onions and coriander. Serve with lime wedges on the side for squeezing over the dish.
