- Soy sauce (gluten-free) - 1 tablespoon
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Green onions, chopped - 2 tablespoons
- Coriander (cilantro), chopped - for garnish
- Lime wedges - for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using a rice cooker or boiling in water for about 15 minutes.
- While the rice is cooking, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add minced garlic and shallots, sautéing until fragrant and golden, about 2-3 minutes.
- Add the sliced pork to the skillet, cooking until browned and cooked through, about 5-7 minutes. Stir in 1 tablespoon of fish sauce, soy sauce, sugar, and black pepper, mixing well. Remove the pork from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Stir in the remaining tablespoon of fish sauce.
- Once the rice is cooked, fluff it with a fork and divide it between two plates. Top with the cooked pork and shrimp mixture.
- Garnish with chopped green onions and coriander. Serve with lime wedges on the side for squeezing over the dish.
