Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent.
- Add the chopped tomato to the skillet and cook until softened, about 3-4 minutes.
- Stir in the shrimp, cooking until they turn pink, about 3-5 minutes.
- Pour in the coconut milk, fish sauce, soy sauce, sugar, and black pepper. Stir to combine and let it simmer for 5-7 minutes until the sauce thickens slightly.
- Once the rice is cooked, fluff it with a fork and divide it between two plates.
- Spoon the shrimp sauce over the rice, garnish with chopped cilantro, and serve with lime wedges on the side.
