  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro (chopped) - for garnish
  • Lime wedges - for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent.
  3. Add the chopped tomato to the skillet and cook until softened, about 3-4 minutes.
  4. Stir in the shrimp, cooking until they turn pink, about 3-5 minutes.
  5. Pour in the coconut milk, fish sauce, soy sauce, sugar, and black pepper. Stir to combine and let it simmer for 5-7 minutes until the sauce thickens slightly.
