- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Eggs - 2
- Pickled carrots and daikon - 100 grams
- Cucumber - 1, sliced
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Rinse the broken rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, combine minced garlic, shallots, soy sauce, fish sauce, sugar, and black pepper to create a marinade for the pork ribs. Add the ribs, ensuring they are well coated, and marinate for at least 30 minutes.
- Drain the soaked rice and cook it in a rice cooker or pot according to the package instructions.
- Heat vegetable oil in a grill pan over medium-high heat. Grill the marinated pork ribs for about 4-5 minutes on each side or until fully cooked and slightly charred.
- While the ribs are cooking, fry the eggs sunny-side up in another pan to your desired doneness.
- Serve the cooked rice on plates, topped with the grilled pork ribs, a fried egg, pickled vegetables, and cucumber slices. Garnish with fresh cilantro and serve with lime wedges.
