- Jasmine rice - 150 grams
- Shrimp, peeled and deveined - 200 grams
- Egg - 1 large
- Green peas - 50 grams
- Carrot, diced - 50 grams
- Red bell pepper, diced - 50 grams
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 small
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Spring onions, chopped - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- Drain the rice and cook it in a rice cooker or on the stovetop with 250ml of water until fluffy, about 15 minutes.
- While the rice is cooking, heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic and chopped onion to the pan, sautéing until fragrant and the onion is translucent, about 3 minutes.
- Add the diced carrots and red bell pepper to the pan, cooking for another 3-4 minutes until slightly softened.
- Add the shrimp to the pan and cook until they turn pink and opaque, about 3-4 minutes.
- Push the shrimp and vegetables to one side of the pan, crack the egg into the empty space, and scramble it until fully cooked.
- Add the cooked rice to the pan, followed by the green peas, soy sauce, fish sauce, salt, and black pepper. Stir well to combine all ingredients and heat through for about 3-5 minutes.
- Remove from heat and garnish with chopped spring onions before serving.
