  • Ginger (grated) - 1 teaspoon
  • Brown sugar - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Green onion (sliced) - 2 stalks
  • Salt - to taste
  • Pepper - to taste
  • Lettuce leaves - 4 leaves (for serving)
  • Cucumber (sliced) - 1 small

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
  2. While the rice is cooking, prepare the mushroom marinade by combining soy sauce, lime juice, minced garlic, grated ginger, brown sugar, and sesame oil in a bowl.
  3. Slice the mushrooms into thick pieces and add them to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  4. Heat vegetable oil in a grill pan over medium-high heat. Remove the mushrooms from the marinade (reserve the marinade) and grill them for about 3-4 minutes on each side until they are charred and tender.
  5. In the same pan, pour in the reserved marinade and bring it to a simmer for about 2-3 minutes to thicken slightly.
  6. Once the rice is cooked, fluff it with a fork and season with salt and pepper to taste.
  7. To serve, place a bed of jasmine rice on each plate, top with grilled mushrooms, drizzle with the thickened marinade, and garnish with chopped cilantro and sliced green onions.
  8. Serve with fresh lettuce leaves and cucumber slices on the side.
