Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
- While the rice is cooking, prepare the mushroom marinade by combining soy sauce, lime juice, minced garlic, grated ginger, brown sugar, and sesame oil in a bowl.
- Slice the mushrooms into thick pieces and add them to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
- Heat vegetable oil in a grill pan over medium-high heat. Remove the mushrooms from the marinade (reserve the marinade) and grill them for about 3-4 minutes on each side until they are charred and tender.
- In the same pan, pour in the reserved marinade and bring it to a simmer for about 2-3 minutes to thicken slightly.
- Once the rice is cooked, fluff it with a fork and season with salt and pepper to taste.
- To serve, place a bed of jasmine rice on each plate, top with grilled mushrooms, drizzle with the thickened marinade, and garnish with chopped cilantro and sliced green onions.
- Serve with fresh lettuce leaves and cucumber slices on the side.
