- Broken rice - 100g
- Pork belly (sliced thin) - 100g
- Scallions (sliced) - 30g
- Vegetable oil - 2 tablespoons
- Garlic (minced) - 1 clove
- Fish sauce - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Salt - 1/4 teaspoon
Steps
- Rinse the broken rice under cold water until the water runs clear, then soak in water for 30 minutes.
- In a pot, add the soaked rice and 200ml of water, bring to a boil, then reduce heat and simmer for 15 minutes until rice is cooked and water is absorbed.
- While the rice cooks, heat 1 tablespoon of vegetable oil in a pan over medium heat and add the minced garlic, cooking until fragrant.
- Add the sliced pork belly to the pan, season with fish sauce, black pepper, and salt, and cook until the pork is browned and cooked through, about 10 minutes.
- In a separate pan, heat the remaining tablespoon of vegetable oil over low heat, add the sliced scallions, and sauté gently until soft, about 2-3 minutes.
- Once the rice is cooked, fluff it with a fork and divide it between two plates, topping each with the cooked pork belly and drizzling the scallion oil over the top.
