Ingredients

  • Broken rice - 100g
  • Pork belly (sliced thin) - 100g
  • Scallions (sliced) - 30g
  • Vegetable oil - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon

Steps

  1. Rinse the broken rice under cold water until the water runs clear, then soak in water for 30 minutes.
  2. In a pot, add the soaked rice and 200ml of water, bring to a boil, then reduce heat and simmer for 15 minutes until rice is cooked and water is absorbed.
  3. While the rice cooks, heat 1 tablespoon of vegetable oil in a pan over medium heat and add the minced garlic, cooking until fragrant.
  4. Add the sliced pork belly to the pan, season with fish sauce, black pepper, and salt, and cook until the pork is browned and cooked through, about 10 minutes.
  5. In a separate pan, heat the remaining tablespoon of vegetable oil over low heat, add the sliced scallions, and sauté gently until soft, about 2-3 minutes.
  6. Once the rice is cooked, fluff it with a fork and divide it between two plates, topping each with the cooked pork belly and drizzling the scallion oil over the top.
