Ingredients
- Jasmine rice - 100g
- Dried shrimp - 50g
- Coconut oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Carrot - 1 medium, diced
- Red bell pepper - 1, diced
- Green onions - 2, chopped
- Fish sauce - 1 tablespoon
- Coconut aminos - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
- Soak the dried shrimp in warm water for about 10 minutes to soften. Drain and chop into smaller pieces.
- In a medium pot, heat 1 tablespoon of coconut oil over medium heat. Add the minced garlic and chopped shallots, sauté until fragrant and translucent, about 2-3 minutes.
- Add the soaked and chopped dried shrimp to the pot and cook for another 2-3 minutes until they are lightly browned.
- Stir in the diced carrot and red bell pepper, cooking for an additional 4-5 minutes until the vegetables are tender.
- Add the rinsed jasmine rice to the pot, followed by the fish sauce, coconut aminos, black pepper, and salt. Mix well to combine all ingredients.
- Pour in 250ml of water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
- Once cooked, fluff the rice with a fork and stir in the chopped green onions.
- Serve hot, garnished with fresh cilantro.
