Ingredients

  • Jasmine rice - 100g
  • Dried shrimp - 50g
  • Coconut oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Carrot - 1 medium, diced
  • Red bell pepper - 1, diced
  • Green onions - 2, chopped
  • Fish sauce - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  2. Soak the dried shrimp in warm water for about 10 minutes to soften. Drain and chop into smaller pieces.
  3. In a medium pot, heat 1 tablespoon of coconut oil over medium heat. Add the minced garlic and chopped shallots, sauté until fragrant and translucent, about 2-3 minutes.
  4. Add the soaked and chopped dried shrimp to the pot and cook for another 2-3 minutes until they are lightly browned.
  5. Stir in the diced carrot and red bell pepper, cooking for an additional 4-5 minutes until the vegetables are tender.
  6. Add the rinsed jasmine rice to the pot, followed by the fish sauce, coconut aminos, black pepper, and salt. Mix well to combine all ingredients.
  7. Pour in 250ml of water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
  8. Once cooked, fluff the rice with a fork and stir in the chopped green onions.
  9. Serve hot, garnished with fresh cilantro.
