Ingredients
- Cauliflower - 400 grams, riced
- Pork shoulder - 250 grams, thinly sliced
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Stevia or erythritol - 1 teaspoon
- Garlic - 2 cloves, minced
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Egg - 2, fried
- Cucumber - 100 grams, sliced
- Fresh cilantro - 20 grams, chopped
- Lime - 1, juiced
Steps
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, combine the pork slices with soy sauce, fish sauce, stevia, minced garlic, and black pepper. Marinate for at least 10 minutes.
- In a large skillet, heat olive oil over medium heat and add the riced cauliflower. Sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.
- Grill the marinated pork slices for about 4-5 minutes on each side, or until cooked through and slightly charred.
- In another skillet, fry the eggs sunny-side up or to your preference.
- To assemble, place a generous portion of cauliflower rice on each plate, top with grilled pork, a fried egg, cucumber slices, and chopped cilantro. Drizzle with lime juice before serving.
