- Garlic (minced) - 2 cloves
- Lemongrass (finely chopped) - 1 stalk
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Cilantro (chopped) - 2 tablespoons
- Green onions (sliced) - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 300 milliliters
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a pot, combine the soaked rice and 300 milliliters of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, prepare the shrimp marinade by combining minced garlic, chopped lemongrass, fish sauce, lime juice, salt, and black pepper in a bowl.
- Add the shrimp to the marinade, mixing well to coat. Allow it to marinate for about 10 minutes.
- Set up a steamer or a bamboo basket lined with parchment paper. Place the marinated shrimp in the steamer, ensuring they are in a single layer.
- Once the rice is done, place the steamer with shrimp over the rice pot and cover it. Steam the shrimp for about 5-7 minutes until they turn pink and are cooked through.
- Serve the rice on plates topped with the steamed shrimp, and garnish with chopped cilantro and sliced green onions.
