Ingredients

  • Jasmine rice - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Garlic (minced) - 2 cloves
  • Lemongrass (finely chopped) - 1 stalk
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro (chopped) - 2 tablespoons
  • Green onions (sliced) - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 300 milliliters

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a pot, combine the soaked rice and 300 milliliters of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the shrimp marinade by combining minced garlic, chopped lemongrass, fish sauce, lime juice, salt, and black pepper in a bowl.
  4. Add the shrimp to the marinade, mixing well to coat. Allow it to marinate for about 10 minutes.
  5. Set up a steamer or a bamboo basket lined with parchment paper. Place the marinated shrimp in the steamer, ensuring they are in a single layer.
  6. Once the rice is done, place the steamer with shrimp over the rice pot and cover it. Steam the shrimp for about 5-7 minutes until they turn pink and are cooked through.
  7. Serve the rice on plates topped with the steamed shrimp, and garnish with chopped cilantro and sliced green onions.
