Ingredients

  • Jasmine rice - 150 grams
  • Young green jackfruit (canned in water) - 200 grams
  • Coconut milk - 100 milliliters
  • Vegetable broth - 300 milliliters
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Fresh ginger - 1 tablespoon, grated
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Fresh cilantro - 30 grams, chopped
  • Green onions - 2, chopped
  • Red bell pepper - 1, diced
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a large pot, heat olive oil over medium heat. Add minced garlic, chopped shallots, and grated ginger. Sauté until fragrant, about 2-3 minutes.
  3. Drain the jackfruit and rinse it. Shred the jackfruit using forks, then add it to the pot along with turmeric powder, coriander powder, salt, and pepper. Sauté for another 5 minutes.
  4. Add diced red bell pepper and cook for an additional 3 minutes until slightly tender.
  5. Stir in the coconut milk, vegetable broth, and soy sauce. Bring the mixture to a simmer.
  6. Add the soaked jasmine rice to the pot, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  8. Drizzle lime juice over the dish and gently mix in chopped cilantro and green onions before serving.
