Ingredients
- Jasmine rice - 150 grams
- Young green jackfruit (canned in water) - 200 grams
- Coconut milk - 100 milliliters
- Vegetable broth - 300 milliliters
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Fresh ginger - 1 tablespoon, grated
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Fresh cilantro - 30 grams, chopped
- Green onions - 2, chopped
- Red bell pepper - 1, diced
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
- In a large pot, heat olive oil over medium heat. Add minced garlic, chopped shallots, and grated ginger. Sauté until fragrant, about 2-3 minutes.
- Drain the jackfruit and rinse it. Shred the jackfruit using forks, then add it to the pot along with turmeric powder, coriander powder, salt, and pepper. Sauté for another 5 minutes.
- Add diced red bell pepper and cook for an additional 3 minutes until slightly tender.
- Stir in the coconut milk, vegetable broth, and soy sauce. Bring the mixture to a simmer.
- Add the soaked jasmine rice to the pot, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Drizzle lime juice over the dish and gently mix in chopped cilantro and green onions before serving.
