- Soy sauce - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 teaspoon
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions (typically with 300ml of water for 150 grams of rice).
- While the rice is cooking, heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat.
- Add the chopped onion and minced garlic to the pan, sautéing until fragrant and translucent, about 2-3 minutes.
- Stir in the diced carrot and bell pepper, cooking for an additional 3-4 minutes until they begin to soften.
- Add the plant-based shrimp to the pan, stirring well to combine with the vegetables. Cook for another 3-4 minutes until heated through.
- Mix in the green peas, soy sauce, sesame oil, salt, and black pepper, cooking for another 2 minutes.
- Once the rice is cooked, fluff it with a fork and add it to the vegetable and shrimp mixture, stirring well to combine all ingredients evenly.
- Fold in the chopped green onions just before serving to retain their freshness.
- Serve hot, garnished with additional green onions if desired.
