Ingredients

  • Jasmine rice - 150 grams
  • Plant-based shrimp - 100 grams
  • Carrot - 1 medium, diced
  • Bell pepper (red) - 1 medium, diced
  • Green peas - 100 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions (typically with 300ml of water for 150 grams of rice).
  2. While the rice is cooking, heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat.
  3. Add the chopped onion and minced garlic to the pan, sautéing until fragrant and translucent, about 2-3 minutes.
  4. Stir in the diced carrot and bell pepper, cooking for an additional 3-4 minutes until they begin to soften.
  5. Add the plant-based shrimp to the pan, stirring well to combine with the vegetables. Cook for another 3-4 minutes until heated through.
  6. Mix in the green peas, soy sauce, sesame oil, salt, and black pepper, cooking for another 2 minutes.
  7. Once the rice is cooked, fluff it with a fork and add it to the vegetable and shrimp mixture, stirring well to combine all ingredients evenly.
  8. Fold in the chopped green onions just before serving to retain their freshness.
  9. Serve hot, garnished with additional green onions if desired.
