Ingredients

  • Cauliflower - 1 medium head
  • Shrimp (peeled and deveined) - 300 grams
  • Coconut milk - 200 ml
  • Curry powder - 1 tablespoon
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Red bell pepper (sliced) - 1 medium
  • Green onions (sliced) - 2 stalks
  • Fresh cilantro (for garnish) - a handful

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower and cut it into florets. In a food processor, pulse the florets until they resemble rice grains.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and the sliced red bell pepper. Cook for 2-3 minutes until the pepper softens.
  5. Stir in the curry powder, followed by the coconut milk and fish sauce. Bring the mixture to a simmer.
  6. Return the shrimp to the skillet and cook for an additional 2-3 minutes, allowing the flavors to meld together.
  7. While the curry simmers, prepare the cauliflower rice. In a separate pan, lightly sauté the cauliflower rice over medium heat for about 5-7 minutes, stirring occasionally until tender.
  8. To serve, place a portion of cauliflower rice on each plate and top with the shrimp curry. Garnish with sliced green onions and fresh cilantro.
