- Cauliflower - 1 medium head
- Shrimp (peeled and deveined) - 300 grams
- Coconut milk - 200 ml
- Curry powder - 1 tablespoon
- Garlic (minced) - 3 cloves
- Ginger (grated) - 1 tablespoon
- Fish sauce - 1 tablespoon
- Olive oil - 2 tablespoons
- Red bell pepper (sliced) - 1 medium
- Green onions (sliced) - 2 stalks
- Fresh cilantro (for garnish) - a handful
Steps
- Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower and cut it into florets. In a food processor, pulse the florets until they resemble rice grains.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the sliced red bell pepper. Cook for 2-3 minutes until the pepper softens.
- Stir in the curry powder, followed by the coconut milk and fish sauce. Bring the mixture to a simmer.
- Return the shrimp to the skillet and cook for an additional 2-3 minutes, allowing the flavors to meld together.
- While the curry simmers, prepare the cauliflower rice. In a separate pan, lightly sauté the cauliflower rice over medium heat for about 5-7 minutes, stirring occasionally until tender.
- To serve, place a portion of cauliflower rice on each plate and top with the shrimp curry. Garnish with sliced green onions and fresh cilantro.
