Ingredients

  • Broken rice - 200 grams
  • Pork shoulder (minced) - 250 grams
  • Garlic (minced) - 2 cloves
  • Shallots (finely chopped) - 1 medium
  • Fish sauce - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Sugar - 1 teaspoon
  • Vegetable oil - 2 tablespoons (for frying)
  • Egg - 1 large (for binding)
  • Cucumber (sliced thin) - 1/2 medium
  • Pickled carrots and daikon - 100 grams
  • Fresh cilantro - 1/4 cup, chopped
  • Lettuce leaves - 2 large
  • Chili sauce (optional) - to taste

Steps

  1. Rinse the broken rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the rice and steam it for about 20 minutes until fully cooked and tender.
  3. In a mixing bowl, combine minced pork, garlic, shallots, fish sauce, black pepper, sugar, and egg. Mix well until all ingredients are incorporated.
  4. Form the mixture into two patties, about 1.5 cm thick.
  5. Heat vegetable oil in a pan over medium heat and cook the patties for 5-7 minutes on each side until golden brown and cooked through.
  6. While the patties are cooking, shape the cooked broken rice into two burger-shaped discs and pan-fry them in the same skillet for 3-4 minutes on each side until slightly crispy.
  7. Assemble the burger by placing a fried rice patty on a plate, followed by the grilled pork patty, topped with lettuce, cucumber slices, pickled carrots and daikon, cilantro, and chili sauce if desired.
  8. Top with the second fried rice patty and serve immediately.
